I've never been a fan of victory conditions. In Civ 5 I always disable them, I don't play Beyond Earth because it doesn't allow you to disable max turns. I really hope that in Stellaris I can disable victory conditions, or at least it's something that can be modded out. I looked about for info on this, but saw nothing. Could any pdox guys comment on this, or have they done so in the past?

Victory conditions arn't complete then it's game over type. It's more of objective you can acheive to show off.

Disabling Victory Conditions or being able to achieve a Victory Condition and still keep playing are ideas that have been brought up in several threads now. Although we haven't gotten a lot of information on the mechanics of victory conditions yet, hopefully Paradox is watching the forums. They've already included player options for setting the different kinds of FTLs, so hopefully something similar for different Victory Conditions would be reasonable.

Personally, I'd look forward to having Victory Conditions as goals to achieve, but I'd appreciate the ability to keep playing even after I met one (or even after an AI empire beat me to it!).

They aren't "traditional" victory conditions, they are just cool end game things you can do if you are an awesome and stable enough empire. It is like building Canals in EUIV, they are cool "LOOK WHAT I DID" things for the end game rather than being incredibly useful.

That is how I view the victory conditions, something fun to shoot for if you want, or ignore if you don't care since they are not "Game-Enders" if anyone achieves them.

Honestly, I have trouble wrapping my head around a game without victory conditions - what would I even do? Having said that, I like the idea of them being optional, so people who want to play the game open-ended can do so.

If there is a victory condition(s) it kind of forces you to play the game in a certain way. An example - last player standing wins - you are forced to outlast everyone and defeat at least the last competitor. Or be the most diplomatic, or influential, or research the ultimate Tech first. some of us, not all I am sure, would like to play without those chains. Perhaps we will end up doing one or 2 of them but we don't want the game to depend o it. Now I am not saying there should be no victory conditions, because I do understand that is enjoyable for others who want to play. Just hoping there is an option to turn them off and to continue the game until even we have had enough.

The issue with victory conditions is not so much the effect on the player(Though I can understand why some people would be compelled to meet them) but it's more the effect on the A.I. as it attempts to "win" the game.

well, there is that. I suppose that there would have to be some guidance for the AI in a no victory conditions scenario, but I think that the ethics and traits would be the determining factor there. Not sure of all the programming entailed, so it is a guess on my part.
